The Gentle Life

I should post something I love about Spring Break every day! 

Today I love how nothing is forced.

I wanted to make spaghetti squash chow mien for dinner. I was able to cook the spaghetti squash in the morning and let it cool so I didn't have to try to deal with it when it was super hot. Seems like a little thing.....unless you have tried to empty out a super hot spaghetti squash!

I also made banana chip muffins. I could get the bananas out of the freezer and let them defrost naturally. 

Allen came home with 50 pounds of Callebaut chocolate chunks last night. They are beautiful in muffins!

...and now I think I will finish my book :)
